The Recipe to Save The Day

Did you forget another supper?  I know I sure did.  Yes, I admit it. I am a seriously forgetful person, and it seems that the one thing that I always forget is supper. Maybe you are just like me, and have I got a go to recipe for just such a pinch.

We all live busy lives where we’re meeting ourselves in and out the door. With 2 sick boys in tow, in and out of school, paying bills and everywhere in between, it’s easy to forget the small things like supper.

Why is it that our children always look to mom as a food source when mealtime comes around? Dad tends to be secondary in the marriage as a probable source even though Michael takes excellent care of his children. Well, this recipe is put together in less than 10 minutes (maybe even 5) and is easy to make ahead!

Oven Chicken Parmesan with Vegetables
1 large crown of broccoli ( frozen 16 oz is fine )
4 medium sized split raw chicken breasts ( fresh or frozen, thawed)
2 cans 15 oz of diced tomatoes
3 tbsp parmesan
2 tbsp. Italian herb seasoning
Preheat oven to 400 degrees. Line a 9 x 13 pan with cooking spray ( or in my case, aluminum foil ). Wash broccoli thoroughly.

Break your broccoli into smaller pieces. If you are using frozen you can skip this step. Cover the bottom of the pan evenly with the broccoli.

Lay chicken breasts on top of the broccoli.

Open 2 cans of diced tomatoes and spread evenly over the top of the broccoli and chicken.

Sprinkle with parmesan cheese and Italian herbs.

Cover in foil and bake for 1 hour.

Serve over rice or in our case, pasta. Uncover when ready to serve.

And here is my husband’s lunch he took to work. Because of the foil, I threw away the foil (which broke my recycling heart) and rinsed out the pan. I dried it and put it away. Super simple with minimal mess. Hope this helps you as much as it did for our family! Bon appetite!
