Sauteed Kale Greens And Diced Ham

So we’ve all heard of cooking kale in some kind of fat usually bacon, ham or sausage.  But this is a reduced calorie version that is sure to tickle your taste buds!  This is great for weight loss, but if you’re watching your sodium levels, then this recipe is NOT for you.  This has a delicious taste but it is more than the recommended sodium intake for you.  I will offer a reduced sodium recipe below this that you can use as a reference so that no one has to omit this tasty treat!  Vegans, don’t worry.  I won’t leave you out either!  I have just the thing you’re looking for minus the meat!  Enjoy!

Sauteed Kale Greens And Diced Ham

Place medium sized saute pan on medium heat.  Remove stems from the kale and rip into large pieces.  Wilt the 2 cups of kale with only 1/3 of the water and stir continuously.  Once water has started evaporating, add diced ham and another 1/3 of water and also add your seasoning.  Saute for about 3-5 minutes until cooked tender.  If necessary, add the last 1/3 of water or omit if your kale looks tender and easy to cut with a fork.  Serves 1!  
So that’s a simple recipe, but what about those who have low sodium diets?  What should they do?  Well have no fear, I have this delicious recipe here!

Low Sodium Kale Greens And Diced Ham

  • 2 cups uncooked kale
  • 1 cup water (tap is fine, filtered okay, too)
  • 1/3 cup diced ham (low or no sodium, or soak in water for about 30 minutes.  Rinse 3 times to remove most of the sodium)
  • 1 tsp. Garlic powder
  • 1 tsp. Onion powder
  • 1 pinch Black pepper (white can be good, too)

Place medium sized saute pan on medium heat.  Remove stems from the kale and rip into large pieces. Wilt the 2 cups of kale with only 1/3 of the water and stir continuously.  Once water has started evaporating, add diced ham and another 1/3 of water and also add your 3 seasonings.  Saute for about 3-5 minutes until cooked tender.  If necessary, add the last 1/3 of water or omit if your kale looks tender and easy to cut with a fork.  Serves 1!  
Well that’s fine and dandy, but maybe you’re vegan, and well, any animal product is a big fat no!  This recipe can be easily converted into a vegan dish used as a main course or as a tasty side dish!

Vegan Kale Greens And Diced Baby Bellas

  • 2 cups uncooked kale
  • 1 cup water (tap is fine, filtered okay, too)
  • 1 cup finely diced baby bella mushrooms (if already cut, then a rough dice)
  • 1/2 cup diced white onion
  • 1 Tbsp. Patti’s Settlement Seasoning

Place medium sized saute pan on medium heat. Remove stems from the kale and rip into large pieces. Wilt the 2 cups of kale with only 1/3 of the water and stir continuously.  Once water has started evaporating, add diced onion and mushrooms and another 1/3 of water and also add your seasoning. Saute for about 3-5 minutes until cooked tender.  If necessary, add the last 1/3 of water or omit if your kale looks tender and easy to cut with a fork.  Serves 1!

Finally, if you’re vegan and on a low sodium diet, my recommendation is to omit the Patti’s Settlement Seasoning and use the last 3 ingredients on the Low Sodium Recipe.  These recipes are delicious!  They’re affordable, healthy and so easy to make.  Seriously, we need to go make some in the kitchen.  And I’m thinking I’ll just add this to my lunch today!  Enjoy!
