Remember my blog post where I said that I was a terrible baker? If not, we’ve had a lot of things since then and you should check it out. I have always dreamed of making sweet treats especially baked goods. However, I was not gifted in this field (aka I’m too impatient), but I know someone who is fantastic at making desserts. My mother in law Judy Guy is a fantastic baker and sweets explorer who just loves making up recipes, testing and perfecting recipes and checking out heirloom recipes. So today, I thought I would showcase one of her recipes specifically her Nutella Cream Pie!
My mother in law attends a small country church called Stockholm United Baptist. It’s way out in the boonies and has quite a number of members despite its small appearance from the outside. Their warm, friendly personality may have you attending a service a time or two but their homecomings and potlucks will draw you back every time! Last Sunday, we decided to join her for her homecoming service, and we had quite a fun time.
Liam ate his fruits, veggies and corn dog pretty well. But as you can see in the picture, he definitely had a fun time testing out the desserts. I think this was someone’s Derby Pie. But let me reassure you that he’s only eating this because he ran out of berries and Nana’s (my mother in law) Nutella Cream Pie!
My stepdad, Jim, came as well and enjoyed the smorgasbord of dishes and treats. He really enjoyed watching the boys have so much fun and enjoying their food as well. I think here, he was enjoying a plethora of sweets though I don’t want you to find him a glutton. Rather, my stepfather has quite the culinary appetite in trying new foods and unexplored food possibilities.
My oldest son was happy to be there as well. However, in this particular picture, he was quite hot and ready to go home. While the picnic (we call it dinner on the grounds here) was outside under a pavilion and there were large industrial fans going, it was sweltering at around 92F (33C). You might not think this is very hot, but there is extreme humidity in Kentucky making the heat index closer to 100F (38C). Jaiden and his brother were hot, and he was begging his dad and grandparents to go home. Luckily, he was kind enough to pose this great picture for me on the blog.
My mom, Kay, sat next to Michael and the two entertained each other by telling stories, talking about the meal and enjoying each other’s company. Today was truly a delight and a blessing. I can’t think of a better way to spend time with the family than with the Lord!
But I digress and we really should head back to the topic of Judy and her Nutella Cream Pie. Seriously, Judy knows her way around the kitchen and has had her fair share of ups and downs baking, testing and trying. And almost every time, Judy has created delicious recipes to share with other family members, and now I am sharing it exclusively with you!
Judy’s Nutella Cream Pie
Nutella Cream Pie
- 2 graham cracker crusts
- 1 8 ounce container Cool Whip
- Recipe for cream pie or 2 boxes of vanilla pudding mix, prepared
- Nutella hazelnut spread
- Chocolate chips
- Make cream pie filling.
- Add a few tablespoons of Nutella to about a cup of the pie filling.
- Spread this in the bottom of the pie crusts. Let set a few minutes.
- Spread remaining pie filling over first layer.
- Spread Cool Whip over the pie filling.
- Sprinkle with a handful of chocolate chips for a tasty garnish.
Cream Pie Filling
Combine the following in a sauce pan and cook on medium heat until thickened:
- 4 1/2 cups milk
- 1 1/2 cup sugar
- Scant 1/2 cup of cornstarch
- 1/2 teaspoon salt
Gradually add some of the filling to 3 beaten egg yolks, then stir into the rest of the filling.
Cook and stir 3 more minutes.
Remove from heat and add 4 tablespoons butter and 1 1/2 teaspoons vanilla.
Still Envious… But I Am Truly Thankful And Grateful
While I still can’t bake or make sweet treats worth a dime, I am completely humbled and grateful that my mother in law can. This recipe was a hit with our family as Nutella happens to be a favorite. In fact, World Nutella Day, a worldwide recognized holiday, is actually on my eldest son, Jaiden’s birthday! So while February is still a bit away, this is a recipe to celebrate all year long! My husband and sons even enjoyed this pie frozen! So that is a fantastic excuse to eat it on a hot summer day! Be sure to just add this recipe to your family!
