I decided to try out a Pinterest recipe for 3 ingredient cookies. Would they taste as good as classic peanut butter cookies? Would they actually hold their shape? I had to find out for myself.
The ingredients were simple. 1 cup of sugar, 1 cup of peanut butter and 1 large egg. So I mixed the egg and sugar together first, and created this creamy yellow mixture. I then added the peanut butter and stirred it in creating this stiff dough that looked and smelled just like cookie dough you would make with flour or buy at the store.
I rolled out the cookies and mashed them flat with a fork creating this tic tac toe kind of pattern. The first batch I baked at 10 minutes because I didn’t read the post in full. The cookies had delicious flavor but were very crumbly and hardly held their shape. The second batch I tried at 20 minutes, and while they were crispy and not burned, the delicious sweet and salty taste of the last batch disappeared.
So the third batch, I tried 15 minutes. The cookie was good, but the flavor wasn’t as strong as the first batch. So the last batch, I tried 12 minutes, and the perfect gluten free, 3 ingredient cookie was born!
I let each batch cool for the recommended 10 minutes, and the last batch held their shape, created the delicious taste you’d want in a peanut butter cookie, and cleanup was a breeze! That’s my kind of dessert! So here’s the recipe.
3 Ingredient, Gluten Free Peanut Butter Cookies
- 1 large egg
- 1 cup white sugar
- 1 cup creamy peanut butter
Preheat oven to 350 degrees. Combine egg and sugar until you have a creamy yellow mixture. Add the peanut butter and mix well. Spoon out dollops of the batter onto an ungreased cookie sheet. Add about 12 evenly spooned dough amounts. Flatten with a fork and cross the fork perpendicular to get a nice tic tac toe shape on each cookie. Repeat for the other 11 cookies. Bake in the oven for 12 minutes. Remove from the oven and allow to cool for 10 minutes. Remove cookies onto a plate and serve when ready. Makes about 1 dozen cookies.
And try really hard to only eat one. That was my problem. I think I ended up with 5. Maybe 6. Oh dear me.
